Paleomg’s Crispy Chicken Thighs w/ Pineapple Honey Mustard Sauce

AH! I attempted to make these muffins the other day and they didn’t turn out the way I wanted so I am going to give them another shot tomorrow. IF they turn out, I am going to test them this weekend on some non paleo eaters and if I get the thumbs up, I will share the recipe next week!

Muffin Fail

I have my bachelorette party this weekend! We aren’t getting married until September but this summer is absolutely insane and this ended up being the best weekend to PARTY! I plan on keeping it as paleo as possible this week but I also will not restrict myself from anything I want! Like pizza, ice cream and alcohol which I will most certainly consume this weekend. I order some goodies from Steve’s PaleoGoods and RX Bars and Coconut Chips from Amazon for the road trip to Chicago!

Since I failed miserably on my muffins, I still wanted to give you a recipe this week and I just so happened to stumble upon this recipe from Paleomg. Stumble upon meaning, I follow her on social media and check her blog daily. #isweariamnotacreep Just had these for dinner and damn the sauce is good! Definitely making these again. Enjoy!

Paleomg's Crispy Chicken Thighs w/ Pineapple Honey Mustard Sauce

Ingredients
  • 2 pounds skin-on chicken thighs, deboned (about 6 chicken thighs)
  • fine sea salt, to taste
  • garlic powder, to taste
  • onion powder, to taste
  • paprika, to taste
  • For the mustard sauce
  • 2 tablespoons ghee, butter or coconut oil
  • 1 cup pineapple chunks
  • ¼ cup dijon mustard
  • 2 tablespoons whole grain mustard
  • 2-3 heaping tablespoons raw honey (depending how sweet you want it)
