Happiest of Monday’s to you! How are you feeling today with yesterday being daylight savings? I love daylight savings for the fact it is lighter so much later now, but I was really enjoying the daylight earlier in the day and now that is gone for a bit again. My body still hasn’t fully adjusted back from being ahead two hours from Punta Cana so this time change has actually helped me get to my normal sleep routine. All of last week I’d wake up between 3:30am and 4:30am because my body wasn’t adjusted. It was lovely. This morning, after getting up to pee at 2:00am I slept right up to my alarm at 5:30am. Thank you daylight savings for helping a sister out.
Today marks 16 weeks of pregnancy and we have a checkup this week! The earlier weeks seemed to crawl and now I can’t seem to keep up with each passing week. I have started planning a few things for the summer and I have to stop and think because I will be in my third trimester by then! Holy smokes. Shits getting real and it’s getting real fast. My hubby and I were living room furniture shopping over the weekend and before you know it we were in the baby furniture section looking at cribs! I have to paint the nursery before moving any furniture in though. I hate painting. Any takers out there that want to paint? I will pay you with food.
When I was a kid and my mom would finally give into my begging about wanting caramel apple dip, I would shove my face and fingers in that container and not take a breath until it was gone. Caramel dip with apples was one of my favorite snacks. Healthy snacking is something I get questions on a lot because it is generally most convenient for people to grab prepackaged snacks that they can throw in their purse or take with them to work. Snacking can be healthy! Here are a few of my favorite healthy snacks:
-yogurt and berries
-vegetables and guacamole, dill vegetable dip or hummus
-hard boiled eggs
-fruit and nuts/seeds
-rice cake with topping i.e. peanut butter, homemade jam, yogurt, tune, smashed hard boiled egg
-quality protein bar in moderation
And that is just to name a few and I’m adding this Greek Yogurt Caramel Apple Dip to my list of favorites! If you have kids or like me, still a kid at heart then making this dip is a must. It takes limited time and effort to make and keeps really well. Make a big batch and keep it handy in the fridge for quick snacks.
- 1 cup plain nonfat Greek Yogurt
- 4 tbsp peanut butter or almond butter
- 4 pitted dates, soaked in lukewarm water for 10 minutes
- 1 tsp vanilla extract
- Dash of cinnamon
- Apple or fruit of choice for dipping
- Place all ingredients except for the cinnamon into a food process and pulse until smooth. You might have to stop to scrape down the sides a couple times.
- Transfer to a bowl and enjoy with your favorite fresh fruit!
- Store in an airtight container in the refrigerator.
