Happy Monday friends! Did you catch my Sunday weekly meal prep on Instagram stories yesterday? If you missed it, head there now because it will only be up for another couple hours. This is week two of changing up my breakfast, adding more leafy greens to my meals and adding more anti inflammatory fruits and vegetables to my day. I can honestly say, I feel great! I stay fuller longer, indigestion has been at an all time low, my energy is up and cravings have been minimal. The power of what whole foods has on the body in terms of healing, energy and recovery is absolutely amazing to me.
When I first found paleo is when I really started to understand what whole foods were and how powerful they can be. At that time I was pretty clueless about knowing what to eat, how much or even how to cook. It has been quite the journey over the last 7 years to learn everything I know now and I still love learning about it and now helping others learn too. Our bodies are so complex and no two bodies are the same. We can all benefit from consuming more whole foods and learning what works best for our own bodies. As much as we wish there was a simple fix to weight loss or reaching optimal health, there just simply isn’t. Health journey’s are a lot like marathons. You don’t just decide to run a marathon and then run one the next day. You must train, educate yourself and find a training technique that works for you. Same goes for your health journey. You first have to decide that you want to make a change and when you are ready to make it, you need to educate yourself with trusted sources, learn how to listen to your body and find a technique that fits into your lifestyle while getting the results you want. The best thing you can do right now is deciding you truly want to make a change for the better and understand that it is going to be a marathon and not a sprint. Get on board with knowing this will be a trek, but a trek for the better.
Speaking of having more energy, I started on the nursery! Over the weekend I painted the room and just today got a few furniture pieces ordered like the crib and chair. We are in full “get house projects done” mode and it feels so good to get things crossed off the list. Our list is much longer than the amount of check marks we have but we are making progress and I am excited to get these things done that we have been talking about since the day we moved in (over a year and a half ago!).
When I was little and my mom would make egg salad I thought it was the grossest thing ever and would refuse to eat it. Because of that, I have actually never made egg salad before. When I ate a lot more hard boiled eggs I would mash one with avocado and have it over a rice cake or just by itself. So I decided to take the plunge and give a crack at making egg salad. I must say, it is pretty damn delicious and taste a lot like the real deal. But then again, just like what my husband said to me, what do I know since I can’t even remember the last time that I have even eaten egg salad. You better just try it out and let me know how you like it! Anytime I use mayo and for this recipe, I use Primal Kitchen Avocado Oil Mayo that I get from Thrive Market.
- 8 hard boiled eggs, peeled*
- 1 avocado
- ½ cup paleo mayo
- 3 green onions
- salt and pepper to taste
- optional: cherry tomatoes and extra green onion for garnish
- *Once your eggs are hard boiled and peeled roughly chop them and add to a bowl with the avocado and green onions. Mash together until there are no large clumps of avocado or pieces of egg. Salt and pepper to taste.
- Serve on green leaf lettuce or gluten free bread and garnish with cherry tomatoes and additional green onions.
