This recipe happened on a whim and I am glad it did! It will be perfect for summer barbecues and weekends at the cabin. I had a jam packed weekend and didn’t have time to meal prep on Sunday. When I was grocery shopping over the weekend I knew I wouldn’t have time to get meal prep done so I bought a rotisserie chicken to at least have some prepped protein in the fridge for some lunches. Sunday night I had a work party at a Mexican restaurant and ended up going home with more than half my fajita, that’s what happens when you go balls deep into chips and salsa. Anyways, that was plenty of leftovers to get me through Monday and Monday evening I was able to do a bulk prep on the grill so I had this rotisserie chicken just hanging out in the fridge. I didn’t want it to go to waste so I decided to do something with it and this Paleo Chicken Salad was created!
I aim to meal prep every single weekend, but sometimes life gets insanely busy and there just isn’t enough time in a day. Even though I wasn’t able to meal prep Sunday, I still made sure to make the healthiest and best choices I could until I was able to meal prep. I didn’t let not having food prepped be an excuse to make bad choices or get off track. I see many people aiming for this perfect ideal “diet” and any slip up sends them into a tailwind of bad choices because they view their diet as an all or nothing type of thing. Eating clean and making healthy choices should be something you aim for every single day, but also give yourself grace when life throws you a curve ball or you slip up. Aim to progress with every day, meal and workout. Aim to be better than you were the day before and get rid of any perfectionist mindset when it comes to living a healthy lifestyle. It is called a lifestyle for a reason. A lifestyle is meant to be attainable, sustainable and enjoyable! if you aren’t enjoying the lifestyle you are living now, it may be time to make a change.
It’s Wednesday and if you are like me, as the week goes on I get less ambitious to cook and rely on leftovers and easy meals. This Paleo Chicken Salad will be a new go to of mine anytime I need to get dinner made quickly, I don’t want to turn on the oven or whenever I don’t want to put much effort into dinner but make it look like it did.
- 1 rotisserie chicken, skin removed, deboned and shredded
- 1 cup blueberries
- 1 cup celery, chopped
- 3 green onions, sliced
- 1 cup Primal Kitchen Avocado Mayo
- 1 tbsp dijon mustard
- juice of ½ lemon
- ½ tsp sea salt
- ¼ tsp black pepper
- 1 tsp dill
- Add the chicken, blueberries, celery and onions to a large bowl. Set aside.
- Add the mayo, mustard, lemon juice and spices to a small bowl and mix well. Add the mayo mixture to the bowl of chicken and mix well.
- Let chill or enjoy immediately on a bed of greens or on your favorite gluten free bun!
