My birthday weekend has officially come to a close. If you followed along on instagram, I had a fun filled weekend of doing all of my favorite things! Friday night we had some friends over for a cookout and fire and I grilled hamburgers, corn on the cob and roasted potatoes and carrots in the oven. I never grilled corn on the cob and it was so good! I will definitely be doing that a lot more this summer and it was much easier than I thought.
On Saturday, we had some family obligations back home but we still went to the farmer’s market and ate brunch at my favorite local cafe, The Nucleus. They have the best omelettes and pancakes ever and you bet I ordered both!
Sunday was officially my birthday and all I wanted to do was spend it with my hubby and pup. We went hiking to Willow River State Park and it was beautiful! You can hike to the falls and they are absolutely stunning. There is a bridge that goes across the river of the falls and then these steps you can climb to over look the falls. The park is huge and has endless trails to hike. We ended up hiking for 5 miles and still had so many trails we didn’t even touch. We will definitely be going back! After that we hopped the state boarder and at a late lunch and Quickfire Pizza in Stillwater, MN. It is a made to order individualized wood-fired pizza restaurant with a cute quaint patio. They have a huge menu of Neapolitan and specialty pizzas plus you can create your own. I ended up getting the Prosciutto Arugula Neapolitan Pizza which came with Italian tomato sauce, goat cheese, arugula, prosciutto ham and peppadew pepper. It was absolutely divine and they have gluten free crust! We head back home to get some of our normal Sunday to-do’s done and we finished the night with frozen yogurt! It was a perfect day to celebrate my 29th birthday and an amazing way to kick off one of my best year’s yet!
I even carved time out of all my celebrating to make this recipe. Memorial Day weekend is already this weekend and this would be a refreshing and delicious snack or dessert to have on hand during the holiday weekend. There is absolutely no cooking and they can be thrown together in no time at all. Definitely add these to your Memorial Day weekend menu!
- 2 cups Greek yogurt
- 2 tbsp chia seeds
- 2 tbsp honey
- 2 cup strawberries, sliced
- 2 cups blackberries
- 1 cup blueberries
- ¼-1/2 cup granola
- Add the yogurt, honey and chia seeds to a bowl and mix well. Place in the fridge for at least 1 hour.
- Create the parfaits by adding ¼ cup of the yogurt chia seed mixture to four separate glasses or mason jars. Then, add a variety of the berries to each glass. Top the berries with another ¼ cup of the yogurt mixture. Evenly distribute the remaining berries to each glass and top off with granola. Keep refrigerated.
