Fresh vegetable salads are just the best in summertime and are my go-to for a quick refreshing meal, healthy dish to pass at a cookout or to meal prep for a quick convenient option to add to lunches and other meals throughout the day. I used to hate tomatoes and would pick them off of literally everything. As I got older and started eating more of a variety of fresh vegetables and fruits I began to like tomatoes and now I eat them almost daily! I usually just toss them on a salad or burger so I was looking to change up my tomato game and this recipe was developed! It is incredibly easy to quickly toss together and you might even have all the ingredients in your fridge already.
I eat a lot more raw vegetables in the summer than I do in the winter because it’s what my body craves. Did you actually know your body will crave different foods and forms of food depending on the season? In the winter you might notice that you crave more cooked vegetables and warm and hearty meals. In the summer you might notice that you crave raw fresh vegetables and lighter meals. Our bodies are one cool specimen!

I like to prep one of two of these salads each week to keep in the fridge to add to my lunches or dinners. This makes packing my lunch and making dinner each night that much quicker because I have one less thing to make. I encourage you to pre prep vegetables each week for a healthy snack to quickly grab and to spice up your meals.
- 20 ounces grape tomatoes, halved
- 1 jalapeno pepper, seeds remove and finely choppes
- 2 green onion, finely chopped
- juice of 1 lime
- 2 tbsp extra virgin olive oil
- salt and pepper to taste
- Place all of the ingredients in a large bowl and gentle mix until the tomatoes are fully covered in the olive oil and lime juice.
- Serve immediately or let chill in the refrigerator.
