Happy Monday and happy due date to me! Today officially marks 40 weeks of my pregnancy and baby girl has officially received her eviction notice. It is very common for first time mothers to go past their due date, but I was secretly hoping I wouldn’t fall into that statistic. However, it looks like I will be. Fingers crossed she comes in the next few days!
Let’s chat Labor Day Weekend! Summer is quickly coming to a close with the celebration of Labor Day weekend this weekend. I can’t believe how quickly summer flew by, but Labor Day is one of my favorite holidays because the weather is still nice and it kicks off all the fall feels. It’s the time of year summer and fall collide and I absolutely love it. Holidays are meant to be celebrated with family and friends and Labor Day weekend is one of the final times to get in a cookout, get out on the lake and relax with a cold beverage. Just because it’s a celebration weekend doesn’t mean all healthy choices have to be thrown out the window. Instead, take a little bit of time this week and plan out a weekend celebration menu of healthy, simple and guilt free treats that everyone will love!

Because 99 percent of Americans will be hosting or attending a cookout at some point over the weekend, follow these simple steps to creating the perfect cookout menu or to bring a dish to pass!
- Pick your protein to grill
- Pick 1 -2 sides to serve with the main dish
- Make a homemade cocktail and get your guests buzzed

If you really want to get into the spirit of things, serve these Labor Day inspired Peanut Butter Coconut Berry Bars. There is no cooking involved and they are sure to be a people pleaser!
- 1 16 oz jar peanut butter
- 2 tbsp raw honey
- 1 tbsp coconut oil
- 2 tbsp ground flaxseed
- 3 tbsp unsweetened coconut flakes (divided)
- 1 cup enjoy life chocolate chips
- ⅓ cup raspberries
- ⅓ cup blueberries
- Add the peanut butter, honey, coconut oil, flaxseed and 2 tbsp coconut flakes to a food processor. Pulse until all ingredients are combined stopping to scrap down the sides when needed.
- Line a loaf pan with parchment paper and add the peanut butter mixture. Evenly spread it throughout the entire pan. Set aside.
- Add the chocolate chips to a double boiler or microwave safe bowl and melt. Stirring continuously. Pour the chocolate on top of the peanut butter mixture and evenly spread.
- Add the raspberries, blueberries and remaining 1 tbsp coconut flakes on top of the chocolate.
- Place in freezer for 2+ hours.
