I GET MARRIED NEXT WEEKEND! Holy crap… I just made a to-do list that I can’t really do until next week, yup, 21 items. Wonderful. The excitement is starting and I can’t wait to start our brand new journey together and spend many many happy years together 🙂
I work for a country music festival in Eau Claire Wisconsin and this year, we are putting on the first annual Eau Claire Mud Jam. It is a 3-mile mud run on our festival grounds with 26 obstacles. TWENTY SIX OBSTACLES! I am heading up a lot of the project and it is pretty cool seeing it all come together! A really neat thing we are doing is that we have partnered up with a local dog shelter, Bob’s House for Dogs. They are a shelter for disabled and senior dogs. This isn’t like any other shelter you have seen. There are couches, chairs and blankets everywhere and they have a huge backyard they get to play in. These dogs are able to enjoy their time at Bob’s House in the most comfortable way ever. Every time I look at their facebook page or make a visit to the house, I want to take a dog home with me. It is a really special place. Anyways, we are donating a large portion of the donations to Bob’s House! I like to say, GET READY TO GET DIRTY FOR A GREAT CAUSE!

This salad, I love me a good chop salad. I got the inspiration from a hotel that I used to work at. The restaurant attached to the hotel had this ahhmazing chop salad and I basically lived on it. It is very difficult for me to find a chop salad that lives up to that one so I decided to make my own!
- 2 cups kale, chopped
- small handful spinach
- ¼ cup green onions, chopped
- ¼ cup mushrooms, chopped
- ¼ cup tomatoes, chopped
- ¼ cup apple, chopped
- 2 pieces bacon, chopped
- 1 egg, sliced
- ½ avocado, sliced
- 1 grilled boneless skinless chicken breast
- optional: cheese
- Place kale and spinach in a bowl or a large plate.
- Add the toppings and chicken.
- Top with dressing of choice.
- Enjoy!
