Gah! It has been far to long since I have created a recipe for you guys! The holidays were very busy this year plus we had a wedding to go to over New Years’ weekend, so please forgive me for my absence. I am officially 20 weeks out from my show. If you have forgotten, I am training for my first figure show which will be in May. I had my second check in with my trainer over the weekend and I am headed in the right direction! In the past month, I have gained three pounds of lean mass and slightly dropped my body fat. BOOM! I have one more month to pack on the pounds then the dreaded cut will begin…..
How was everyone’s holidays!? Tell me all about them because I want to hear about them! Besides almost dying and getting flung into the ditch, our holidays were great! Lots of time with the fam jam, saw some old friends and attended a super fun wedding! Did anyone set a New Year’s resolution? In a previous post I talked about how I am not really a New Year’s resolutioner, but I did set a 2016 goal for myself and I am going to keep that to myself for the time being…. I am aiming high and dreaming big but hey, who knows!
Today someone asked me, “What is more important, cardio or lifting weights?” In most cases, lifting weights is better than cardio. I think she was a little surprised by my answer but it simply comes down to increasing your “metabolism.” The more muscle you can add to your body the more your body works to build and retain that muscle. When you do cardio, you basically only burn calories while doing cardio and no more than that. When you lift weights, your body uses the rest of the day to rebuild it’s muscles which means you are burning additional calories all.day.long to restore your muscles. A lot of women are afraid to get “bulky” but this is near impossible. Trust me. Take me for example, for the last month I have been eating over 2,100 calories, taking supplements and lifting really heavy. I have gained lean muscle mass but I am not getting bulky!
Let’s turn our focus to these chicken drummies. These would be the perfect appetizer to bring to any gathering with family or friends! They are really easy and really quick to throw together. You could also use chicken wings!
- 2 lbs chicken drumsticks
- 3 tblsp organic honey
- ½ cup coconut aminos
- ½ cup cilantro, chopped
- 1 tsp sea salt
- ½ tsp ground black pepper
- Place all ingredients in a small bowl (except drumsticks) and mix well.
- Place the drumsticks in a large zip-lock bag and pour honey mixture over them. Make sure they are all fully coated and let marinate in fridge over night (6-8 hours).
- Preheat oven to 400 degrees. Move the oven rack to the very top of the oven.
- Line a baking sheet with tinfoil and place a metal rack on top. Place the drumsticks on the metal rack. Place in oven (top rack) for 50 minutes.
- Let cool and enjoy!
