Hello you happy souls! I haven’t created a recipe in a couple weeks and oh man did I miss it! Before we get to these brownies, let me catch you up on my training. I am officially 16 weeks out. I just had another check in with my trainer and I am down 2 pounds of solid fat and gained another .25 pound of muscle. I would have liked to see a bigger muscle gain, but I was very happy about the fat loss. I am excited about these next four weeks to gain some more muscle and get bigger! I am a bit nervous that I won’t have the muscle mass to compete in figure but I am ready to work my butt off in the gym to get there.
How are all of your goals going? Are you staying on track with your New Year’s resolutions? If you see yourself falling off, losing motivation and coming up with excuses just remember WHY you started in the first place. If you understand and believe in your why, nothing will stand in your of reaching your goal. Dig a little deeper, push a little harder, stay consistent and results will come.
Valentine’s Day is this weekend, holy crap where does all the time go? I used to never believe adults when they told me as a young kid to not wish to grow up because time just flies by. And now, I am that adult saying that to kids! #youknowyourgettingoldwhen We don’t have any crazy romantic Valentine’s Day plans. If I had it my way, we’d get scary movies, popcorn and ice cream and veg in our pj’s all weekend. Yep, that sounds like the most romantic and most perfect weekend in my book. But, instead I will be joining the hubby in Minneapolis at a work function. At least I will get a nice dinner out of it! If you are looking for a chocolatey delicious treat to feed your honey or hey, maybe just yourself make these brownies! Once they cool they get all nice and fudgey! Throw some sliced strawberries on top and now you have “Romantic Chocolate Chip Brownies.”
- 2½ cups almond flour
- ½ cup coconut flour
- ½ cups cocoa powder
- ¾ cup coconut oil
- 3 tablespoons maple syrup
- ½ cup almond butter
- 1 cup water*
- ¼ - ½ cups enjoy life chocolate chips
- 1 teaspoon baking soda
- dash of salt
- Preheat oven to 350 degrees
- In a large bowl sift together almond flour, coconut flour, cocoa powder, baking soda and salt
- In a small bowl mix together coconut oil, maple syrup, almond butter and water
- Add the wet ingredients to the dry ingredients and mix until all ingredients are mixed well
- Grease an 8x8 baking pan and poor brownie mixture and smooth out.
- Bake for 50-55 minutes
- Let cool and indulge with strawberries or ice cream!
