Dirty Cauliflower Rice

Hello! I want to start with saying, SORRY! My mind has been a little preoccupied lately and recipe creations just haven’t been happening. Luckily, I was struck with some inspiration lately so I have for you a brand new recipe! Before we get to that, let me catch you up on my show prep.

I am officially 4 weeks out from my show, yikes! In the last two weeks I have FINALLY noticed a change in the right direction. Bodies are so crazy weird. We are all so different and react to things so differently. It has been interesting and neat to see my body change in just a short amount of time. I had my 4 week check in yesterday and honestly, it was a bit frustrating. I was so excited because I saw some awesome changes since my last check in. However, my body fat percentage hardly moved! Like, what the hell! I have a goal of where I want my body fat to be at and I am nervous that I won’t get there. As I thought more on it, I am going to be happy with whatever package I bring to the stage because I have been grinding day in and day out, hitting my macros, keeping the intensity up in the gym and doing everything my coach is throwing at me (including the ungodly amount of cardio).  I need to remind myself that this is my first show. My body has never endured this type of stress or have gotten to this point, ever. I am already pretty proud of the amount of work and dedication I have given to this process. It isn’t easy but it is something I am passionate about and that keeps me going. Want to see some progress pictures? Well, I am going to show you anyways 🙂

So, these pictures were taken between weeks 5 and 4. This first one is my practicing my posing. Posing can make or break you when it comes to the show. Each week I have been practicing more and more to hopefully be flawless day of. But hey, if I fall flat on my face, which may happen, that will be okay too. My heels are real high and I am just a country girl who loves me a nice pair of flats.

Posing

This picture is a one weeks difference of my mid section. I have had love handles all my life. When I gain weight, it goes straight to my hips and thighs (lucky me, right?). So, this progress actually makes me really happy. I never thought I would see the day where I didn’t have love handles. So far this process has taught me and reassured me that hard work, dedication and consistency does pay off. So many people work so hard and see progress and then they think that is it. No, you must stay consistent in order for those results to stick.

Ab Progress

I don’t know how many more progress pictures I will share, but I was thinking of sharing with you a day of my eats. What do you think? Comment below if this is something you would like to see! Now onto this easy low carb recipe! These days, just about every day is a low carb day for me so finding new ways to spice up my meals is a must. I paired this Dirty Cauliflower Rice with grilled chicken. You can pair it with just about any protein or even throw an over easy egg on top for a scrumptious breakfast!

Dirty Cauliflower Rice

Recipe type: Side Dish
Serves: 3-4
Ingredients
  • 2 tablespoons ghee
  • 16 oz riced cauliflower*
  • ½ red onion, finely chopped
  • 1 red pepper, finely chopped
  • 2 carrots, finely chopped
  • 20 asparagus sprigs, chopped
  • Salt and pepper to taste
Instructions
  1. In a large pot over medium/low heat, melt the ghee and add the onion. Let onion cook for 2-3 minutes.
  2. Add in all other ingredients and stir well. Cover and let cook for 10 minutes stirring at 5 minutes.
  3. Salt and pepper to your likely and serve with dinner!
Notes
*I bought a bag of riced cauliflower in the produce section of Target. One bag is 16 ounces. One head of cauliflower would also do the trick!
