Valentine’s Day is officially over. The day of love has come and gone. I believe in showing love and gratitude to my loved ones every day, but I suppose other people need to be reminded once a year to show their love and to feel loved. Every year Nick and I decide we aren’t doing anything for Valentine’s Day because, well, it is just another day. I will never forget the year way back in the day where we had this same conversation and I literally did nothing. Like we discussed! No card, no treats, no nothing. Well, I came to find out that his feelings were really hurt. Ever since that year, I at least get him a card. I absolutely hate buying cards because they are such a waste of money. So, this year I decided to write him a letter and I secretly knew he was going to surprise me with something. And he did.
I woke up to a dark chocolate bar, card, and little notes all over the house. He’s just the sweetest. After work I then came home to flowers too. I wanted to keep the romance alive so I got us a very thought-out and romantic dinner of Chipotle that we ate (at different times) on our way to my younger sister’s basketball game. Seriously, I am such a romantic!
I am almost done with the book “The Five Love Languages” and my love language is definitely quality time. Nick and I didn’t have a big elaborate romantic Valentine’s Day, but we were able to spend time together (even if it was driving) just talking and being with each other. To me, that means so much more than gifts or a fancy expensive dinner. My love tank is full 🙂
Are mashed potatoes one of those comfort foods for you? They are for me! I remember when I was little and my mom would make mashed potatoes. I would put corn and ketchup in them and they were just the best! Here is a much lower carb option for you to satisfy those comfort food cravings. - 1 head cauliflower, chopped
- 2 tbsp organic grass-fed butter
- 3 garlic cloves
- 1 tsp sea salt
- ¼ tsp black pepper
- Steam the chopped cauliflower until fork tender. Put the steamed cauliflower and the rest of the ingredients in a food processor and process until smooth.
- Enjoy as a side!
