Weekend breakfast has been my jam lately. I have been changing it up, trying new recipes and trying to be a bit more creative. During the week I stick with a protein smoothie every morning because it is convenient, really quick to throw together and I seriously crave them. But recently on the weekends, I’ve been digging the more traditional breakfast of eggs! I made this breakfast last weekend and it was so good that I needed to share the recipe! If you are cooking for one you will have leftovers and if you are cooking for a crowd feel free to double the recipe.
Before we get to the recipe lets chat about breakfast. I’m sure you have heard it all before, breakfast is the most important meal of the day, eat within 30 minutes of waking up, never skip breakfast, it’s okay to skip breakfast. Gets confusing doesn’t it? Most people are eating for general health so let me shed some light on the big breakfast debate. Disclaimer: these are my personal opinions and am simply offering my thoughts on the topic. I am not telling you what to do or what will work for you. Moving on… Do you like eating breakfast? Do you feel good when you have a healthy breakfast? Then, eat breakfast. Are you not hungry right away in the morning? Do you feel better eating later in the day? Then, skip breakfast. I am speaking about overall general health. If you are training for a race or competition then nutrient and meal timing is very important and beneficial but we will save that for a different day.
What I am getting at, do what works for you! For me, I need and want breakfast every morning otherwise I get real hangry. I crave a delicious nutrient dense meal right away in the morning which boosts my energy and gives me the focus and motivation to keep eating healthy throughout the day. If this doesn’t sound like you, then do something else! If you are not prepping for a body building show or something similar and you are skipping breakfast to calorically restrict yourself, then maybe it is time to reconfigure your mindset and experiment with adding in a healthy breakfast each morning. Again, calorie restriction is a topic for a different day.
Your first meal of the day, no matter the time, should be a healthy and nutritious meal (well, all meals should be). If you fill your stomach with sugary and high processed foods, your body is going to crave those types of foods for the rest of the day. Do you and your body a favor and start making your first meal of the day the best meal of the day! And you can start with this easy scramble!
- 1 plantain, sliced
- 4 large eggs, whisked
- 1 red bell pepper, chopped
- 2 handfuls spinach
- 1 rosemary sprig
- 2 tbsp coconut oil
- ½ avocado
- salt and pepper to taste
- Melt the coconut oil in a large skillet over medium high heat. Once the coconut oil is hot, add the sliced plantains and cook 1 - 2 minutes on each side or until golden brown. Remove the plantains from a pan and place on a plate with paper towel, sprinkle with sea salt.
- Bring temperature of stove to medium heat and add the bell pepper. Cook for about 5 minutes before adding the spinach. Once the spinach is starting to wilt, add the eggs and rosemary and continuously stir the mixture until the eggs are fully cooked. Fold in the cooked plantains.
- Serve immediately and top with avocado.
