It’s hump day but my week is far from over. It is one of those weeks where literally everything is happening at once. The one thing I am most excited about is the Eau Claire Marathon is this Sunday! It is a Boston qualifying race and comes right through the University of Wisconsin Eau Claire (I work at the university!). We call it the “Blugold Mile” because our mascot is a Blugold. Don’t ask what that is because no one really knows. Just a few weeks ago I became heavily involved with the planning of Blugold Mile and it is so fun! The Blugold Mile will be completely lined with student organizations and community members cheering on the runners. Students bring grills and grill out, make signs, there will even be a bouncy house. Since getting involved with the marathon and Blugold Mile I have gotten asked many times if I am running it. My initial thought is absolutely not! The other weekend I did my long trail run and ended up going almost nine miles. When I was done, I was like I could do a half marathon… This is funny to me because I was the person who always said I hate running! And now, I run 3-4 times per week and banking more miles than I ever have before. The even funnier part, I kind of like it….
We are always changing, evolving, finding new interest. I am learning to embrace and experience new things. Running longer than 3 miles used to make me really uncomfortable and it is was down right hard! Now, I look forward to lacing up and hitting the trails to get in my runs. As we get older I feel it is important to find new and fresh things to keep us learning and experiencing new things. So, it is time for you to get up, find something new to experience and do it!
These cookies are basically banana bread in cookie form. Meaning, you need to make them right now because they are heavenly. Simple ingredients that most of you probably have in your house so you have no excuse not to make them!
- 2 bananas, mashed
- 1 cup rolled oats
- 2 tbsp almond butter
- 2 tbsp honey
- 1 tsp vanilla extract
- 3 tbsp enjoylife chocolate morsels
- Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
- Combine all ingredients except for the chocolate morsels in a large bowl and mix well. Fold in the chocolate morsels.
- Using a cookie scoop, scoop the batter onto the parchment paper. Bake for 18-20 minutes. Let cool and enjoy!
