Happy Monday! I don’t know about you, but I could use a day to recover from the weekend. It was one of those weekends that we didn’t really have set plans but we ended up doing literally everything. Ever have one of those? It was one thing to the next to the next to the next! I can’t complain because my husband and I got in some quality time and we got to spend time with family and friends doing fun things like going to a Beach Boy concert! Today I am back to my routine though! Just like many of you, I like to kick it on the weekends and just enjoy the weekend but I don’t like to stray from my routine for too long.
Part of my weekend kickin it is still getting in a workout or two and making mindful decisions when it comes to my nutrition. I found doing these two things makes me feel so much better throughout the weekend and especially when Monday roles around. And now, today I can easily step right back into my normal workout routine and normal meals without feeling like ish and get right back on track.
If you happened to over indulged over the weekend, it is okay! Don’t beat yourself up about it and just hop back on the healthy train. Don’t deprive food today, get in a good workout and drink lots of water. Within a day or two you will be feeling back to your normal self again! One or a couple bad decisions over the weekend isn’t an excuse to throw in the towel for the rest of the week. No matter what you did or didn’t do, doesn’t matter anymore. Focus on the week ahead and what you can do to make it a better week than last!
I’m not all that experienced in the beet world. I used to hate them. So, after making this salad and having two people ask me if I cooked the beets and they looked at me funny when I said no I had to google if eating raw beets was okay. Ha! Don’t worry, they are so get to making this fresh summer salad!
- 3 beets, peeled and cut into small cubes
- 1 medium apple, cored and cut into small cubes
- ½ cup roasted cashews
- juice of 1 lemon and zest of 2 lemons
- 1 tbsp extra virgin olive oil
- salt and pepper to taste
- Once the beets and apples are chopped place all ingredients in a large bowl and mix well. Place in fridge for 30-60 minutes to chill.
- Enjoy!
