Oh, happy Monday! I am one who actually really likes Mondays. It’s the day you get to set the intention for the rest of the week. It’s the day to get back on track if you fell off over the weekend, it’s the day to plan the other days of the week to conquer them. It’s the day you set yourself up for another successful week. It’s another Monday, another week, another opportunity to crush life!
I am kicking my week of by dedicating myself to a 30 day fitness challenge! I’m excited to be part of this challenge because it is all about simplicity and consistency plus a whole lot of encouragement and fun! This salsa can be enjoyed with your favorite chips or it can be added to any of your meals as a delicious flavorful side like I have been doing. Once everything is chopped, this recipe is extremely easy to pull together and makes plenty for summer gatherings or your weekly meal prep.
- 3 mangos, chopped
- 1 red pepper, finely chopped
- 1 orange pepper, finely chopped
- 1 jalapeno, seeds removed and finely chopped
- ½ red onion, finely chopped
- juice of 1 lime
- salt and pepper to taste
- Place the chopped mangos, peppers and onion in a large bowl and mix well. Add the lime juice and salt and pepper and mix until well combined.
