Happy Wednesday! I had to think a bit to remember what day of the week it is. I’ve been in Vegas since Sunday and have only been averaging about four hours of sleep a night. I can’t complain though, because the experiences and memories I have made since being here is totally worth it. For those of you that don’t know, I’m in Vegas for a conference with the health and wellness company I am partnered with. I’ve been involved with this company for almost two years and this is my first time being to this event. It is the largest event of the year and all the industry leaders and top trainers are here along with 15,000 other people determined to change world health. The company has gone above and beyond this year to offer us the best experiences and training yet and I can say that confidently because today we get a private training by the one and only Tony Robbins! How fricken cool is that! I can’t even put into words how excited and thankful I am to be getting a training from the most influential motivational speakers in the world! I will have a full recap of my trip on the blog next week!
This was my first time roasting cabbage and it most certainly will not be the last! It takes hardly any prep and cooks up quickly for the perfect side to any dinner.
- 1 head green cabbage
- 2 tbsp ghee, melted
- 4 garlic cloves, minced
- Dash of salt and pepper
- Preheat oven to 425 degrees.
- Cut the end off of the cabbage and cut into wedges. Place the wedges on a sheet pan and with a brush, coat the cabbage with the ghee mixture on all sides.
- Place in oven for 30 minutes.
- Enjoy!
