Happy Monday friends! I hope you woke up today feeling refreshed and ready to take on the week. I had a much needed fun filled weekend in my hometown where I soaked up as much time as I could with family and friends. I woke up today with a vision and intention for my week and am ready to crush it no matter what is thrown at me.
Life has been so busy lately (but when isn’t it busy?) and sometimes a break is what your body and mind needs. I generally spend weekends catching up on house work, blog and client work and anything else that fell through that cracks during the week. I could feel my mind getting bogged down from everything lately and decided to give it a break. Even though I did end up doing some work, it was still the break I needed to reenergize me and get me excited again for a new week.
A new week brings fresh starts, clean slates and more opportunities to reach your goals. Did you set your intention for the week? What are you going to do this week that is just a little bit better than last week? Just by taking 5 – 10 minutes today to write down your intentions and goal for this week will help you focus and dial in on the what needs to be done to fulfill those things. Maybe you want to be better at meal prepping lunches so you write that down as your focus. Then, you break that down into smalls tasks to get it done. Or maybe you want to focus on having a better attitude this week. So, you write down that you will read 5 pages of an uplifting book this week and schedule it in your calendar so it gets done. Making small adjustments each week on things that you want to be a little bit better at will allow you to not get overwhelmed with too many changes and keep you focused and driven towards specific tasks. Start small if you have too, but make a positive change this week.
Energy balls are such a great snack to keep on hand. They are so easy to make and there are so many different combinations. There is nothing better than wanting a snack and opening the fridge to these convenient, delicious and high protein energy balls!
- 1 cup pitted dates, soaked in hot water for 10 minutes
- ½ cup almond butter
- 1 scoop vanilla high quality grass fed protein powder
- ⅓ cup unsweetened shredded coconut
- ¼ cup walnuts
- ½ cup shredded carrots
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
- Place all ingredients in a food processor and pulse until the dough forms a ball. Place the dough in the refrigerator for 30 minutes (otherwise it will be very sticky).
- Use a cookie scoop to scoop the dough and form into balls. Place each ball on a parchment lined baking sheet. Keep refrigerated.
