With Christmas comes a lot of treats and temptations and one of the healthy holiday tips I coach my clients on is to have a healthy breakfast before any celebrations. I recommend having a breakfast that it full of essential nutrients and whole foods. Incorporating a healthy breakfast will allow for your body to “not get too hungry” later in the day. You will be able to much better control any cravings and eat until satisfied (and not stuffed) when you already have good nutrients in you.
The quickest and most convenient option would be a super food shake. Here are a few of my favorites!
- Blackberry and Coconut Water Dutch Chocolate Smoothie
- Vanilla Chia and Pumpkin Spice Smoothie
- Peach Mango Smoothie Bowl
Or, maybe you have to feed the entire family. My go to when making breakfast for a lot of people is a quiche and here are some of my go-tos.
If you still need to feed the fam but limited on time, that’s when I like to make a one pan or sheet pan breakfast. Along with this new recipe I am sharing today, here are a couple more options!

So remember to get in a healthy breakfast over the holidays to help not over indulging later in the day. This Breakfast Sheet Pan can really be made to your liking. Add or subtract any ingredients and create your own savory breakfast!
- 2 tbsp ghee, metled
- 1 bunch kale, chopped
- 1 yellow pepper, seeds removed and chopped
- 2 cup baby red potatoes, finely chopped
- 1 pack Applegate Chicken and Sage Sausage
- 1 cup cherry tomatoes
- 4 eggs
- salt and pepper to taste
- Preheat oven to 400 degrees.
- Add the kale, pepper and potatoes in a gallon ziploc bag. Pour the melted ghee into the bag, seal and shake until everything is fully coated.
- Pour the kale mixture out on a sheet pan and add the chicken sausage. Cook for 25 minutes.
- Remove the sheet pan from the oven and add the cherry tomatoes and eggs. Cook for 5 minutes. Remove from oven and enjoy!
