Pineapple in guacamole? Yep, you read that right! It has been in frigid temperatures the last couple weeks so I needed to brighten things up with a little taste of summer. The pineapple gives this guacamole the perfect citrus flavor and is really good with fresh vegetables, tortilla chips or as a topping to any meal. Holiday parties might be over, but that doesn’t mean delicious healthy appetizers have to stop! Whip up a batch to keep in your fridge for a snack or a way to spice up your dinner.
Another thing that is helping me get through this horrible cold snap is that we are finally going on a honeymoon! After 2 and half years of marriage, the hubs and I are finally going on a tropical well deserved honeymoon. I have never been outside of the United Sates (I know, I know. I need to live a little!) so I have no idea what to expect. In March we are headed to the Dominican Republic to soak up every once of sunshine, be lazy on the beach and eat all the food. Every resort I looked at I went straight to their restaurant options. If I am going to be ale to eat all the food, I want some good choices to choose from! - 4 avocados, pits removed
- 1 cup pineapple, thinly chopped
- ⅓ cup fresh cilantro, chopped
- juice of 1 lime
- 1 tsp garlic, minced
- salt and pepper to taste
- Add all of the ingredients to a large bowl. Using a fork, smash the avocados until it reaches desired consistency and mix well.
