Happy Spring y’all! Yesterday was the first day of spring and it was a cold windy day here in Wisco. No worries though because the sun is out today and the snow is melting. I am a lover of all four seasons and am thankful I live in a state I get to experience them all. I love spring when the snow is completely melted, the trees start to bud and the grass turns green. It means summer is coming! And summer means cute dresses, days at the lake and cookouts. See, how can’t you love every season? They all have something special to offer!
It’s official. I am turning into one of those clumsy pregnant chicks. About 4 out of 5 times I walk up stairs I trip at least once and just last night my right arm decided to spaz resulting in my dinner spilling in my lap and on the floor. It’s been lovely. My husband wants to put me in a bubble for the next 5 months. I’ve learned to laugh at myself when I do something dumb and to not cry over spilled milk (literally). After blankly looking at my dinner all over the floor last night and throwing out some necessary cuss words I shrugged my shoulders and said shit happens. I saved as much as I could (5 second rule, right?) and let Mojo have the rest. I could easily be very annoyed with this new found clumsiness, but instead, I am laughing it off and moving on. There is no point in getting worked up about something that I honestly can’t really control.
Pregnant or not, shit is going to happen that doesn’t go our way. Things will spill, you will fall on your face, your kids will be terrors, your workouts will suffer and you won’t always make the healthiest choices. Let out your 5-10 seconds of frustration and move on. Not all situations can be controlled, but your attitude towards those situations can. Choose to handle shitty situations with grace, humor and positivity. When we allow our negative emotions to take over that is when we lose all control of the situations. Our minds and attitude are a powerful thing and can bring you out on top of any situation you find yourself in.
Easter is just around the corner and this would be a fun treat to whip up to snack on while coloring Easter eggs or to have at your Easter Celebration. It cooks in only 2 minutes and is delish!
- 2 tbsp coconut flour
- ¼ tsp baking soda
- ⅛ tsp cinnamon
- ⅛ tsp nutmeg
- ¼ tsp vanilla extract
- 1 tbsp tahini
- 1 tbsp plain greek yogurt
- 1 tbsp coconut oil, melted
- 2 tbsp cashew milk or other nut milk
- ½ tbsp maple syrup
- 1 tbsp finely shredded carrots
- 1 tbsp coconut butter
- Add the coconut flour, baking soda, cinnamon and nutmeg to a small bowl and mix.
- Add the vanilla extract, tahini, greek yogurt, coconut oil, nut milk, maple syrup and carrots to the same bowl and mix until fully combined.
- Grease a small dish or mug and pour the batter into it. Place in microwave for 2 minutes increments.
- Add roughly 1 tbsp of coconut butter on top and enjoy!
