Happy Monday! We are finally getting a tiny hint of spring this week which has me wanting to get all my dresses, sandals and tank tops out and finally shove all my sweaters to the back of my closet. I may have to be a bit more patience, though, as it gets chilly again later this week. Come on Wisconsin, my belly is getting too big for jeans! Speaking of my growing belly, I am halfway through this pregnancy! Woot woot! We are that much closer to meeting baby Kiss.
Are you prepped and ready to have a successful week with your meals and workouts? Like I always do, I took a little time yesterday to prep some meals and bulk food items, chop some fruit, and create our weekly dinner menu. Along with preparing myself with my meals for the week, I also look at my calendar and schedule my workouts for the week. Lately, each week has been different with things we have going on and I’ve been needing to get in my workouts where I can. Just by taking a little time on a Sunday I know what I will be eating this week, when I will need to cook and when I’ll get in my workouts. I can now go about my days not having to stress about food or finding time to workout. I have a base plan down and if anything comes up I will be able to easily adjust my workouts and still have the comfort and be stress free about meals. Fail to plan, plan to fail. Simple as that!
Earlier in my pregnancy sweet potatoes didn’t agree with me, but I am now able to eat them without getting any bloat or indigestion which makes me so happy because I love sweet potatoes! I could eat them at every meal. Sweet potatoes can be baked, boiled or my favorite, roasted! Roasting any vegetable gives it an amazing taste and changing up the seasonings every so often keeps your taste buds and stomachs happy! Living a healthy or paleo lifestyle doesn’t mean you can’t enjoy some fries. Whip these Chili Spiced Sweet Potato Fries the next time you make burgers, chicken strips or just have a craving for fries!
- 2 medium sweet potatoes, washed and cut into fries
- 1 tbsp coconut oil, melted
- 1 tsp chili powder
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp course sea salt
- ¼ tsp black pepper
- Preheat oven to 400 degrees.
- Combine the spices in a small bowl and mix well. Set aside.
- Place the sweet potato fries in a large bowl and gently toss with the melted coconut oil. Sprinkle the chili seasoning over the fries and toss until all fries are coated.
- Lay the fries evenly on a baking sheet and try not to have them over lapped or crowded. Place in oven for 35-40 minutes.
- Enjoy!
