I haven’t tried a Primal Kitchen product that I did not like. I use their dressings almost daily to toss a quick salad for lunch or dinner and their Green Goddess is my favorite flavor at the moment! - 2 boneless skinless chicken breast
- 1 tbsp ghee
- salt and pepper
- 1 avocado, sliced
- 1 apple, sliced
- 1 bunch red leaf lettuce, chopped
- 2 tbsp goat cheese
- 5-6 tbsp Primal Kitchen Avocado Oil Caesar Dressing
- Preheat oven to 425 degrees. Place a cast iron skillet on the stove over medium high heat and add the ghee.
- Season the chicken breast with salt and pepper and when the skillet is hot, add the two chicken breast. Brush the top of each chicken breast with 1 tbsp Primal Kitchen Avocado Oil Caesar Dressing. Let cook for 5-6 mins. Flip the chicken breast and brush with another 1 tbsp Primal Kitchen Avocado Oil Caesar Dressing. Let cooke for 5-6 mins.
- Place the skillet with the chicken breast in the oven for 25 minutes.
- While the chicken is baking, make the salad. Add the chopped red leaf lettuce to a large bowl and add the sliced avocado, apple, and goat cheese. Gently toss to mix.
- Remove the chicken breast from the oven and slice. Add the sliced chicken to the salad and drizzle 3-4 tbsp of Primal Kitchen Avocado Oil Caesar Dressing on top. Gently toss until the chicken and dressing is mixed in.
- Transfer the salad to two plates or bowls. Enjoy!
