Well hello there! Today I am bringing you a fun summer inspired recipe because grilling season is officially here! Does anyone have a Traeger grill? I’ve heard such awesome things about them and now want one. If you have one, do you love it?
Speaking of summer, have you set a summer goal? I don’t mean a goal to look good in a bikini or to drop such and such pounds by June. What are you going to do this summer to better your health? Many people spend weeks “shedding their winter fluff” and then come summer it is all about the sugary cocktails and cookouts and goals seem to go out the window. Instead of not having a goal at all or only focusing on the number on the scale, set an active goal! Find a local 5k, obstacle course or bike race and sign up. Join a new gym, fitness class or explore outdoor trails to spice it up and not get in a workout rut. Set a goal to make one new recipe a week or to bring a healthier dish to any summer cookout. Summer is such a fun time of year, but can be a very indulgent time of year as well. By setting yourself a couple active goals, you can still have fun while continuing to work towards your best self!
Here are a few more ideas for some fun summer goals:
- schedule nightly or weekly walks with your family or best friend
- when going out, pick a restaurant that you can walk to
- Grill one new recipe a week
- sign up and commit to a fun run
- explore nature trails in surrounding areas near your hometown
- host a monthly healthy happy hour with friends
- join a running club
Pick a goal or two and commit! The longer you commit and work towards integrating healthier habits into your life, no matter the season, the easier and more rewarding your healthy lifestyle will be!
Let’s chat quick about these kabobs! Buying kabob skewers was one of the best things I did and is quickly becoming one of my favorite grilling gadgets. I love to grill vegetables on the grill and these make it so much easier. For these kabobs, I marinaded the chicken in this Italian Dressing and Marinade. Any Italian marinade will work, but I choose to use this brand for it’s crazy clean ingredients and taste! You can even save 10 percent on your entire purchase using the promo code kissbybrooke at checkout. I had some left over vegetables and chicken that I ended up throwing on the grill. So, if you have a couple more skewers, 5 or 6 would probably be the perfect number.
- 3-4 boneless skinless chicken breasts, cubed
- ½-1 cup grape tomatoes
- 1 cup baby bella mushrooms
- 1-2 zucchinis, sliced
- 1 red onion, cut into wedges
- ¾ cup Primal Kitchen Foods Italian Dressing and Marinade
- salt and pepper to task
- 4 kabobs skewers
- Place the cubed chicken in a large airtight container and add the Italian marinade on top of the chicken. Seal the lid and place in the refrigerator for 8 hours.
- Once the chicken is done marinating, compile your kabobs with the chicken and vegetables in any order you'd like. I placed two pieces of chicken in a row followed by an assortment of the vegetables and repeated. With the remaining marinade in the dish, brush over the kabobs and season with salt and pepper.
- Fire up the grill and when hot, place the kabobs on the grill. Grill each side (4 sides) for 3-4 minutes each.
