It just occurred to me that next week is July 4th. How did this happen? Wasn’t it just yesterday we were getting dumped on with snow? Summer goes by way to quickly, but with 4th of July just around the corner that means more time on the lake, at the cabin and treats! To me, holidays are usually a time to loosen up a bit, enjoy some cocktails (in my case mocktails) and a few treats here and there. Here are 14 of my best dessert recipes that will keep you feeling cool, fresh and in the July 4th spirit! And remember, even those these desserts are made with cleaner ingredients and are described as healthy treats, they are still treats! These treats are most certainly better to indulge in than desserts made with highly processed ingredients, but remember to enjoy them in moderation.

Make sure and add this Peanut Butter Cup Ice Cream to your list of healthy indulgences because it is ahhhmazing! In this recipe I use Justin’s Peanut Butter and Justin’s Dark Chocolate Peanut Butter Cups. Feel free to use any peanut butter or peanut butter cups you like most. Enjoy!
- 1 can full fat coconut milk
- 2 tbsp honey
- 4 tbsp peanut butter (or almond butter)
- 2 tsp vanilla extract
- 6-8 Justin's Peanut Butter Cups (or almond butter)
- Add the coconut milk, honey, peanut butter and vanilla extract to a high powered blender or food processor and blend until smooth.
- Follow the direction on your ice cream maker and add the ice cream mixture to the ice cream maker. Let churn 10-15 minutes.
- While the ice cream is churning, place the peanut butter cups on parchment paper. Place another piece of parchment paper on top of the peanut butter cups. Using a large spoon, your hands or rolling pin crush and crumble the peanut butter cups.
- Once the ice cream becomes a soft serve consistency add half of the crumbled peanut butter cups to the ice cream maker. Let the peanut butter cup crumbles blend into the ice cream.
- You can serve and eat the ice cream as a soft serve with the remaining peanut butter cup crumbles on top. Or, turn off the ice cream maker and transfer the ice cream to a bread pan, top with additional peanut butter cups and place in the freezer for 1-2 hours.
- If placed in the freezer, set the ice cream out on the counter 15 minutes before eating.
