I usually share recipes every Monday and Wednesday, but this recipe is just too good not to share before the 4th of July! This is a must make recipe that non paleo eaters will snatch right up, I guarantee it! If you are going to a cookout or not, this guacamole salsa needs to be consumed by all.
With everything I have shared in the last couple weeks, you should be able to have your full menu ready to go for the big holiday tomorrow or celebrations later this week. Don’t forget to sip on a healthy and refreshing cocktail as you are cruising the lake, sitting poolside or enjoying the AC. While you are getting tipsy, you can use this step by step process to create the perfect cookout and serve up your guests the best dessert imaginable! Not celebrating July 4th because it’s on a Wednesday? No worries, many of these recipes would be great for a mid week meal prep, night cap to relax or to just enjoy a sweet treat.

- 3 avocados
- 4 garlic cloves, minced
- 3 large tomatoes, chopped
- 1 jalapeno pepper, chopped and seeds removed
- 1 yellow pepper, chopped
- 1 green pepper, chopped
- ½ red onion, chopped
- juice of two limes, divided
- ⅓ cup cilantro, chopped
- salt and pepper to taste
- Cut the avocados in half, remove the pit and scoop the insides out into a bowl. Using a fork smash the avocados. Add the minced garlic and juice of one lime and mix well. Set aside.
- Add the tomatoes, jalapeno pepper, yellow and green pepper, and red onion to a large food processor. Blend for 10-15 seconds making sure there are still some chunks. You do NOT want to liquefy it! Transfer the salsa mixture to a large bowl and add the juice of the remaining lime, guacamole mixture, and salt and pepper. Mix well. Taste and add additional salt and pepper if needed.
- Enjoy with veggies, chips, on a salad or burger!
