Oooooooh happy Monday! Today is a good day because after an incredibly busy last couple months and insane week last week, my life gets to go back to normal and I get to focus on baby W who will be making her appearance next month! For those of you that don’t know, I was subcontracted to coordinate employment for a large country music festival. The event was just this past weekend and to say I am relieved it is over, is quite the understatement. I was doing that on top of my full time job and nutrition coaching. Enough about that, though. Let’s chat how I am getting back to my routine after being off of it for a full week.
Even though I was dead to the world yesterday, I still went to the grocery store so I could have healthy foods and meals for the week. I usually do a larger meal prep on Sundays, but I only had the energy to meal prep my breakfast. So, tonight I plan to grill up some chicken and roast some veggies to have on hand for lunches for the week. The pantry and fridge is also stocked with quick snacks to grab when needed.
My eating pattern was a bit off too over the last week. I tried my best to stick to my normal diet of foods I eat, but that wasn’t always to easiest. I had more snack items than usual that were easy to bring with me without needing to stay cold and way less veggies than normal. To get back on track, last night I broiled salmon and yellow squash and made a big salad of fresh greens and ingredients. This week I will be sure to make all meals at home to ensure I am getting in the best nutrition for my body to recuperate faster and feel back to my normal self!
I was only able to get in two workouts since last Monday. Even though I am still pretty beat from lack of sleep and being on my feet constantly, I am going to aim to get in 4-5 workouts this week. I plan to slowly ease back into lifting as I am still sore from the week and don’t want to over do it.
Getting back on track can be easy when you have a good understanding of the basics of living a healthy life. Life happens and we get busy and can’t always stick to our normal eating or activity behaviors. Having the basics down is like our security blanket. It gives us something to fall back on, somewhere to start again. If you get off track, find the first opportunity you can to get back on track and stick to the basics!
- 2 medium sweet potatoes
- 2 tbsp coconut oil, melted
- salt, pepper and dried dill to taste
- Cut the sweet potatoes in half and then cut them in half again, but length wise.
- Place a large pot on the stove and add the chopped sweet potato. Cover with water and bring to a boil. Let boil 15 minutes or until fork tender. Drain the water.
- Preheat oven to 425 degrees and place the boiled sweet potato on a baking sheet skin side down. Using the bottom of a glass, gently smash each sweet potato. Drizzle with coconut oil and season with salt, pepper and dried dill. Place in oven for 25-30 minutes.
