Because I was busy sharing with you all about my new nutrition coaching adventure yesterday, I wasn’t able to get a recipe up. But no worries my friends! I am bringing you one today! Tomorrow kicks off a busy rest of the week, but it is everything that I love to do! Tomorrow evening my husband and I will be driving to my hometown to coach a free workout. If you are in or around the Medford, WI area be sure and stop by! It will be at the Medford City Park at 6:30pm. Thursday, we are headed to Madison in the wee hours of the morning to hit up the Crossfit Games for a couple days! Last year was the first year the Games were in our home state and now we have the chance of actually attending. I.am.pumped.
Whenever I know I will be on the road traveling I immediately plan out my snacks and meals. While in Madison, most of our meals will be snack like, from vendors or at restaurants. Since this is a new experience for me I am not entirely sure what to all pack with me, but I already headed to the grocery store and loaded up on healthy snacks.
Some of the things I will be bringing are:
- jerky
- trail mix
- single serve nut butter packets
- apples
- carrot sticks
- nut clusters
- protein balls (making these tonight)
Even though I don’t know what food will be offered at the Games, I am still pre-planning to have healthy options already with me. Eating healthy on the road is doable with just a little thought and thinking ahead!
So this breakfast smoothie, I started consistently taking collagen a month or so before becoming pregnant and I have yet to see any stretch marks (knock on wood) and I chalk a lot of that up to my daily dose of collagen. - 12 ounces chilled brewed coffee
- 1 frozen banana
- 1 scoop chocolate collagen powder
- 1 tbsp unsweetened cocoa powder
- 1 tsp chia seeds
- 1 tbsp peanut butter or nut butter of choice
- 1 tsp raw honey
- 1-2 handfuls of ice
- Add all ingredients to a blender and blend until smooth.
- Enjoy!
