Happy Monday! How are you feeling after the long holiday weekend? I hope everyone had a great Thanksgiving filled of joy, laughter and amazing eats! Our meal was hands down one of the best we’ve ever had for Thanksgiving. Everything was made from fresh whole foods, the company was great, baby A was a little champ throughout the entire day and dessert was on point!
But, Thanksgiving is behind us and it is time to get back on track if you allowed for a couple extra indulgences over the holiday weekend (I know I did). Getting back on track doesn’t have to be this long difficult process. All you need to do is simply get back to your normal routine of eating healthy meals, drinking plenty of water and stick to your workout routine. After any indulgences the worst thing you can do is restrict yourself days after. All that does is turn into a downward spiral of restricting and indulging. Instead, aim for each meal this week to be just a little bit better than the last, have balance and forget about any holiday indulgences because that is done and over with.
If you follow me on instagram you may have noticed that I love eggs. You may have also noticed that I am taking eggs out of my diet for 30 days. Ugh, I know it’s the pits. Baby A has been experiencing some dry skin and has a mild case of eczema. Eczema runs in the family and I too get it from time to time. After doing a little research, I have found that there is a definite link between eczema and food allergies. The most common foods associated with eczema are eggs, wheat, peanuts and soy. I decided to start with eliminating eggs because they are linked to eczema the most and I already eat gluten and soy free. So, I will be putting my love for eggs aside for the next month in hopes it clears up baby’s skin.
That means I will have to be getting creative in the kitchen. Breakfast is easy. I make the same thing just leave out the eggs and add a bit more protein. Baking will be a whole new ball game. I have never baked egg free before so this is going to be a new challenge for me! Stay tuned for egg free treats in the near future! In the meantime, I will be eating eggless hashes on the regular!
- 1lb ground turkey or pork sausage
- 1 medium sweet potato, finely chopped
- 1 red pepper, finely chopped
- ½ yellow onion, finely chopped
- 2 large handfuls fresh kale, chopped
- 2 tbsp coconut oil or ghee
- avocado slices for topping (optional)
- Add a large saute pan on the stove over high heat and add the sausage. Brown until fully cooked. Remove the meat and grease from the pan and set aside.
- In the same pan, reduce the heat to medium high and add the coconut oil. Once melted add the sweet potato. Cook for 3-5 minutes or until the sweet potato becomes soft
- Mix in the pepper and onion and cook until soft, 3-5 minutes. Add the kale and cook until wilted, 1-2 minutes. Add the sausage back in and mix well.
- Remove from heat, dish up, add your toppings of choice and enjoy!
