Happy Monday to you all out there! How is it that Christmas is in just a short couple weeks? I have yet to do any Christmas shopping. I have ideas though so that sort of counts, right?
I am going into my second week of being back at work. And man, it’s a lot of work and I am only working three days a week at the moment! It’s really just the pumping at work that is annoying because when I get home I have all the parts and bottles to clean plus the bottles from daycare and I have to store my pumped milk. It’s a pain in the ass. Plus I have about 67 other things I have to carry in from the car and all I want to do when I get home is snuggle baby A!
I learned pretty quickly last week that if I want to have dinner on the table the days I work, I MUST think ahead and be proactive. Luckily I had salmon in the freezer last week that I could quickly make, otherwise, a Monday dinner wasn’t going to happen.
Meal prep has been a saving grace lately to ensure we have food for breakfast, lunch and now I am starting to prep dinners too. Sundays have always been my day to meal prep and get ready for the week ahead. While on maternity leave I was very laxed with this and really only prepped a couple items that my husbanded needed for the week. I am now full back on the meal prep wagon, though! Yesterday was spent in the kitchen prepping all kinds of goodies for the week and I have a roast in the crockpot as we speak! Life is busy with a newborn, as if I had to tell any of you parents that. Meal prep takes a bit longer and takes a bit more planning to get it done between feedings, playtime and naps. But, it is doable and sets us up for a successful week! So if you noticed, this recipe isn’t typed out in the handy dandy format like usual where you can save and/or print the recipe. Well, wordpress decided to go ahead and update and now I can’t find my recipe plugin to add to this post. So until I can figure that out, this format will have to do! I will be sure to update this as soon as I can get this figured out.
You all need to make these cookies though. They are so simple to make and are mighty tasty! These are the perfect cookies to add to your Christmas baking to do!
- ½ cup peanut butter
- ½ cup honey
- 1 tsp vanilla extract
- 3 tbsp water
- 1 tbsp ground flaxseed
- 1 cup cassava flour
- ¼ tsp baking powder
- ½ tsp salt
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Add the peanut butter, honey, vanilla, water and ground flaxseed to a medium size bowl. With a large spoon, mix until fully combined. Add the flour, baking powder and salt and mix until fully combined.
- Using a cookie scoop, place 14 balls on the prepared baking sheet. Grease a fork with cooking spray and flatten each ball making a crisscross pattern.
- Place in oven for 12 minutes. Remove from oven and let cool.
- Enjoy!
