T-minus one week until Christmas! I went to Target over the weekend for a few things and O.M.G. it was insanely busy. There were a total of 6 carts left in the entry. That’s it. I’d say I am a pretty defensive and decisive shopper (for good reason), so I got in and out of there as quickly as I could. Sliding past lolly-gaggers, squeezing in between indecisive shoppers and line hopping until I hit the shortest one. I was pretty proud of myself of how quickly I made that trip for how busy the store was! Then, we decided to get some more Christmas shopping done so we headed to the mall. I had baby A strapped on the front of me and all was well until… some stranger thought it was a good idea to touch Avri’s face. Excuse me, I don’t know where you or your hand has been and I don’t know you. Please do not touch my baby. I had to get the hell out of there after that. But any-who, Christmas shopping is 95% finished so that’s a positive.
It doesn’t feel like Christmas is just a week away as I have been very preoccupied with other things going on in life, but then I randomly remember it’s almost Christmas and want to bake all the Christmas treats! And now I have these Peppermint and Chocolate Coconut Protein Balls to add to the list! You can use any chocolate protein powder for this recipe. - 1 cup peanut butter or almond butter
- 5 pitted dates, soaked in warm water for 10 minutes
- 2 scoops chocolate protein powder or collagen powder
- 2 tbsp cocoa powder
- 2 tbsp pure maple syrup
- 1½ tsp peppermint extract
- ¼ cup enjoy life dark chocolate morsels
- ¼ cup unsweetened coconut flakes
- Add all ingredients into a food processor except for the chocolate morsels and coconut flakes. Blend until fully combined, stopping once or twice to scrape down the sides. Remove the blade and fold in the chocolate morsels.
- Add the coconut flakes to a small bowl. Using a cookie scoop form the dough into balls. Roll each ball in the coconut flakes until covered.
- Keep refrigerated and enjoy!
