Happy Monday friends! How are we all feeling after the Super Bowl? If you’re like me and didn’t partake in any Super Bowl festivities I am sure you are feeling pretty good. If you went out, hosted a party or attended a party you might be feeling it a bit today. As I get older (I am almost 30 – UGH!) I cannot stay out as late or drink near as much as I could in my early 20’s. I swear I have one drink and I am dehydrated and bloated for days and wake up with a headache. Getting old blows.
I absolutely love breakfast. I could eat breakfast for every meal and snack of the day. I have been loving sauteed kale and grape tomatoes with two over easy eggs paired with warm oats. Seriously so good. Now I could eat these breakfast sandwiches on repeat. Breakfast doesn’t take a lot of effort to make a well balanced and healthy meal. I can usually whip breakfast up in about 10 minutes. If your schedule doesn’t allow you to make breakfast at home each day, then prep it instead of skipoing it.
Some of my favorite breakfasts to prep for a full week are:
- Egg Free Breakfast Hash
- Fall Squash Egg Frittata (any frittata or egg bake – lots under the breakfast tab!)
- Leftover Salmon Scrambler
- Pumpkin and Banana Flaxseed Oatmeal Casserole
- Bacon and Potatoes Breakfast Egg Muffins
Starting your day with a healthy breakfast triggers your mind to make healthy choices the rest of the day and will keep you full longer. If you start your day with a high sugar/processed carb meal your body will crave sugar the rest of the day and you most likely will end up eating more throughout the entire day.
Don’t miss out on a nutritious breakfast because you are rushing out the door. Take a little bit of time to prep it for the week. Keep it simple, use ingredients you love and you will never want to skip breakfast again or be tempted to hit up the nearest drive-thru. You could even prep a large batch of these pancakes and make enough sandwiches to last you a full work week.
- 1 small sweet potato
- 2 eggs
- 2 pieces of bacon
- splash of vanilla
- dash of cinnamon
- salt and pepper to taste
- Shred or grate the sweet potato with a cheese shredder into a small bowl. Add 1 egg, vanilla and cinnamon. Mix until the egg is fully mixed in.
- Using a griddle or skillet, cook the sweet potato mixture into two even sized pancakes until golden brown on each side.
- Cook your bacon and egg.
- Build sandwich by placing the bacon and overeasy egg on one of the pancakes. Place the other pancake on top.
- Enjoy!
