Happy love week! Valentine’s Day is on Thursday and if you are in a committed relationship or enjoying the single life, it’s still a day to celebrate! Even though I believe you should show your loved ones each and every day that you love them, Valentine’s Day can still be fun to show a little extra appreciation.
At my full time job I am on a Student Wellness Committee where we plan monthly initiatives to help college students live a healthy balanced life. These initiatives cover all aspects of health and this week we are spreading the word of self-love through our Self-Love Loving Yourself Through Empowerment, Compassion, and Confidence campaign. My part in this was to partner with the campus marketing department to spread self-love affirmations over the campus social media platforms.
Self-love impacts your health more than you know. Being confident in your own skin, feeling empowered to be you and being compassionate towards yourself is taking care of your mental and emotional health. With a strong mental and emotional health you are more willing to take care of yourself physically. The more you love yourself the better you will treat yourself. Think of someone that you truly love. How do you treat them? I bet you treat them with respect, love up on them and only want the best for them. Treat yourself just how you’d treat you most loved friend or family member.

Use this week to not only love up on your loved ones, but use it to love up on yourself. Treat yourself to something special like a massage, getting your nails done, or taking yourself on a date. A healthy mind leads to a happy heart and a happy heart leads to being your authentic self and being you leads to self-love.
Speaking of treating yourself, these Raspberry Lemon Bars are the perfect treat to share or keep all for yourself this Valentine’s Day! These bars are made with simple ingredients and lots of love!
- For the Crust:
- 1 stick organic grass fed butter, melted
- 1 cup cassava flour
- ¼ cup coconut sugar
- 1 tsp vanilla extract
- For the Filling:
- 1½ cup cassava flour
- 1 cup honey
- 4 eggs
- zest of 2 lemons
- juice of 3 lemons
- For the Toppings:
- 6 oz container fresh raspberries
- 1-2 tbsp organic powdered sugar
- Preheat oven to 350 degrees and line a 9x13 baking dish with parchment paper. Grease the parchment paper with cooking spray.
- Add all the crust ingredients for a food processor. Blend until fully combined stopping as needed to scrape down the sides. Add the crust to the baking dish and using your hands evening spread it out in a thin layer covering the entire bottom of the pan. Place in oven for 10-12 minutes.
- While the crust is baking, add all of the filling ingredients to a bowl and mix until smooth.
- When the crust is done baking, add the filling. Place back in the oven for 20 minutes.
- Remove from oven and let fully cool. Add the raspberries and powdered sugar.
- Enjoy!
