How is it Monday already and how is it the middle the February? Before I know it it will be my 30th birthday and I’ll be kissing my 20’s goodbye. That’s a depressing thought on this Monday morning so let’s move on!
Fritters are usually deep-fried, but not these! If you follow me on instagram and see my daily food journal you will know that I love sweet potatoes. I could eat them at every meal of the day and I’d be lying if I said I haven’t done that before. I am also a creature of habit and tend to roast them all the time because that’s my favorite way of having them. Recently I have been getting creative and changing up how I am preparing them. Just the other week I made sweet potato pancakes in this Sweet Potato Pancake Breakfast Sandwich recipe. Now this week, I made fritters! I have a ton of sweet potato inspired recipes. If you use the search function and just search “sweet potato” you will find recipes for sweet potato banana bread, fries, pizza bites, hashes, waffles and more.
Sweet potatoes don’t only taste delicious, they are also jam packed of vitamins, minerals and antioxidants to support a healthy diet. Sweet potatoes are a great source of iron, calcium, selenium, many B vitamins and vitamin C. What this jargon means is that sweet potatoes are a powerful whole food with a lot of benefits that should be in your diet. If you aren’t a fan of sweet potatoes, I don’t believe you. If you don’t like your grandma’s boiled and bland sweet potatoes that she serves every Thanksgiving, I don’t blame you. Get creative and try cooking them a different way. - 4 cups sweet potato, finely shredded (about 4 small sweet potatoes)
- 2 cups kale, chopped
- 4 eggs
- ¼ cup avocado or extra virgin olive oil
- ¼ cup cassava flour
- 1 tsp salt
- Add all the ingredients to a large bowl and mix well.
- Heat and grease an electric griddle pan to 375 degrees or a large skillet on the stove over medium high heat.
- Using a ⅓ measuring cup add fritter mixture to hot pan creating 15 round fritters. Gently flatten keeping each fritter about ¼ inch thick. Cook for about 4 minutes each side. Cook in batches if needed.
