Happy Monday! We yet again got dumped on with snow over the weekend. Wisconsin hasn’t seen this much snow in one month since 1962. Damn. I think we are sitting close to 40 inches of snow in one month. ONE MONTH! I think the kids have had more snow days than school days in the last four weeks. Oh to be a kid again….
It is currently 6am and I am sitting on my couch in the dark writing this. Baby A has been wide awake laying in her crib since 5:40am. She has decided to start waking up before 6am the last couple days. I’m not into it. I refuse to get her out of her crib before 6am, though. And since she isn’t just chilling and not making a peep I am leaving her in hopes she drifts back to sleep. Highly unlikely though. So, if any mommas out there have any tips to help her to sleep past 6am send them my way!
We aren’t here to talk about the weather or baby sleep, the lack thereof. No, no. We are here to talk food! I love food. I don’t understand people who don’t care about food. My husband is like that. If he is busy or working on a project he can go all day without eating. I have to usually tell him to eat something. People like that are weird.
Last week I shared these Sweet Potato and Kale Fritters which are perfect to keep in the fridge to add to any meal or create a quick snack with. And now I have these Apple and Kale Turkey Sausage Patties that are also perfect to prep for the week.
You could:
- pair them with eggs or an egg frittata
- make a breakfast sandwich
- pair them with avocado for a protein and healthy fat snack
- pair them with a vegetable and healthy carb for a post workout meal
The options are endless! Feel free to sub 1 pound pork sausage in place of the 1 pound turkey sausage. The moral of the story is though, add these patties to your next weekly meal prep! You won’t be sorry.
- 2lbs turkey sausage
- 1 apple, cored and finely chopped
- 1 cup kale, finely chopped
- 1-2 tbsp coconut oil for cooking
- 1½ tsp sea salt
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried sage
- ½ tsp nutmeg
- ¼ tsp cayenne pepper
- Add all of the spices to a small bowl and mix. Set aside.
- Add the turkey sausage to a large bowl and sprinkle the spice mixture on top. Wet your hands and massage the spices into the sausage until fully combined.
- Add the chopped apples and kale and massage until fully combined.
- Usually a ¼ measuring cup, create 15 patties.*
- Place a large skillet on the stove over medium high heat. When hot add 1 tbsp coconut oil. Add the patties and cook 3-4 minutes each side. Cook in batches to not overcrowd the pan. Add more oil as needed.
- Serve with breakfast and enjoy!
