If Mother Nature is going to refuse us spring, I will create my own spring. And I am starting with this Spiced Apple and Carrot Collagen Juice! Last year around this time I was soaking up the sun in Punta Cana. This year the only vitamin D I am getting is in pill form. Every morning in Punta Cana I would start my day off with a workout on the beach and then to a delicious fresh fruit and vegetable juice. They were absolutely delightful. I started my day today with a workout in the gym and had this juice as a midmorning snack. It might not be sunny Punta Cana or the beach, but it will do.
I am always looking for new ways to get more vegetables into my diet. Punta Cana or being buried in 53 inches of snow, this juice is perfect to lift your spirits, taste extremely fresh and will give you all the spring feels!
- 1 medium carrot, peeled and quartered
- 1 small apple, cored and quartered
- ¼ inch piece fresh ginger, peeled
- 1½ cup water
- 1 scoop Primal Kitchen Vanilla Coconut Collagen Fuel
- 2 tsp maple syrup or honey
- ¼ tsp cinnamon
- Place all ingredients in a high powered blender and blend until smooth.
