Fingers crossed spring has sprung and we had the last snow storm of the winter over the weekend! Our dog has cabin fever so bad that he keeps taking himself on walks down the road. Once he learned his boundaries in our yard he has never left it. We could let him out and he’d roam and come right back to the door. Now that we have 67 feet of snow and it’s been so damn cold out he has nowhere to go so he has decided to take himself on walks and I get calls from strangers saying they picked my dog up on the side of the road. I probably look like a horrible dog mom to these people. Long story short, I am hoping these warmer temps are here to stay so we can get out and about on some hikes and walks!
Daylight savings was this weekend! I personally love having more daylight during the day because it makes me happier and much more productive. I could never live in a state where it rains and is gloomy 90 percent of the time. My mood is affected by the weather way to much for that. Give me all the sun and natural vitamin D! I even told me husband a few weeks ago that we need to start saving for a house somewhere south so we can be snow birds in the winter. He wasn’t that into it, but I will keep working on it. Pizza for breakfast usually isn’t socially acceptable unless you are a poor college student. Until now! This Breakfast Pizza Frittata legit tastes like you are sinking your teeth into a big ole piece of pizza. The best part about this recipe is that you can make it however you want. Make it with any meat or vegetables of your choosing and even feel free to add some cheese. The next time I make this I think I am going to add in some dairy free mozzarella because why not!
I have been meal prepping egg bakes for the last month or so for my husband and I throughout the week and it was time to switch it up and this definitely did the trick! If you are needing a change up of your typical weekly breakfast or a fun meal for a weekend brunch make this recipe!
- 1 dozen eggs
- 6 pieces of bacon, chopped
- ½ green pepper, seeded and chopped
- ½ cup mushrooms, sliced
- 1 green onion plus more for garnish
- ½ cup grape tomatoes, halved
- 1-2 handfuls kale, chopped
- 14 ounce jar pizza sauce
- 10-12 Applegate pepperonis
- ½ tsp salt
- ¼ tsp pepper
- ½ tsp Italian seasoning
- 1 tsp oregano
- pinch of red pepper flakes
- Preheat the oven to 350 degrees.
- Place a cast iron skillet on the stove over medium high heat and add the bacon. While the bacon is cooking, add the eggs, seasonings and pizza sauce to a large bowl and whisk. Set aside.
- When the bacon is fully cooked transfer it to a plate lined with paper towel and dab the excess grease. Leave as much bacon grease in the pan as you can.
- Add the peppers and mushrooms to the cast iron skillet and let cook for 3-5 minutes. Stir in the kale and when it starts to wilt add the green onion, tomatoes and cooked bacon and cook for 2-3 minutes. Add mixture to the bowl of eggs and mix well. Transfer egg mixture back into the cast iron skillet.*
- Place 10-12 (or more) pepperonis on top and place in oven for 50 minutes.
- Remove from oven and enjoy!
