A good side dish can make or break a meal. Without a healthy and delicious side or two added to your meal it can make for a pretty blah meal. With grilling season just around the corner this Green Apple Slaw would be the perfect addition to a cookout! Our patio is still under a bunch of snow, but the second there is room for our grill we are dragging it out. This slaw is a fun change up to typical cole slaw because of the green apple. It gives it that perfect balance of fresh and sweet.

Don’t ever let a meal or cookout fall short without having an amazing side dish to go along with it. A fresh salad can go along way and add so much flavor to a meal. I like to cycle through a few of these all spring and summer long.
- 2 green apples, cored and finely chopped
- 2 cups fresh carrots, peeled and shredded
- 1 red pepper, seeded and thinly sliced
- juice of 1 lemon
- ½ cup paleo mayo
- 3 tbsp balsamic vinegar
- 1 tbsp pure maple syrup or honey
- salt and pepper to taste
- Add the shredded carrots and pepper to a large bowl. Set aside. Core and quarter the green apples and add chunks to a food processor. Pulse until finely chopped. Do not over pulse (only 5-10 seconds). Add the apple to the large bowl. squeeze the lemon juice over the apple slaw and mix.
- In a small bowl add the mayo, balsamic vinegar, maple syrup (or honey) and salt and pepper. Mix until smooth. Taste the dressing and either add more sweetener or vinegar depending on how you like it. Pour the dressing over the slaw and mix well.
