Happy April! I can’t believe it is April already. Where is time going? I always love the first of each month because I get to look back and see which recipes you all loved the past 30 days. This months featured recipe are these Lemon Blueberry Vanilla Collagen Protein Balls! It’s always fun to see the recipes you are all making up because it is a great reminder of all of the yummy recipes I want to go back and make again. So, it is a new month and 4 months into 2019. Are you sticking with the goals you set for yourself this year? I hope so. If you aren’t, though, what is holding you back? It is easy to be excited and motivated to set a lofty goal in the beginning of the year, but as the excitement wears off motivation starts to decrease and sooner or later you find yourself back into all of your old habits. This happens all.of.the.time. Many people fail at their weight loss goals because they go on this “quick fix” journey that is overly restrictive and not something they can sustain long term. To truly be and feel healthy, lose unwanted body fat and love the skin you are in a quick fix diet isn’t the answer. Learning the basics of proper nutrition and practicing healthy habits to create a healthy lifestyle is the answer. Constantly dieting isn’t a fun life. Enjoying delicious whole food meals, having a piece of cake at a party, partaking in family pizza night, working out for enjoyment and not punishment, feeling energized is a fun life. Please, quit the juice cleanses, 30 day cleanses and overly restrictive meal plans. Instead put that time and effort into creating a sustainable, enjoyable and abundant lifestyle.
If your “diet” doesn’t allow you to have cookies from time to time, it’s time to say buh bye to that diet. These cookies didn’t last long in the Kiss by Brooke household. They were the perfect after dinner treat and paired perfectly with my Sunday morning coffee!
- 1½ cups gluten free rolled oats
- 1 cup cassava flour
- ½ cup maple sugar
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp sea salt
- 1 stick grass fed butter, softened to room temperature
- 2 eggs
- 1 tsp vanilla extract
- 1 cup raisins
- Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
- In a medium bowl add all the dry ingredients, except the raisins, and sift until fully combined.
- In a large bowl add the butter, eggs and vanilla and mix until fully combined using a hand mixer. Slowly mix in the dry ingredient mixture until fully combined. Fold in the raisins.
- Using a cookie scoop, scoop the dough onto the cookie sheet. Grease the back of a fork and gently flatten each cookie.
- Place in oven for 12-14 minutes, let cool and enjoy!
