I’m alive! We are all alive! Our household got hit with the stomach flu Sunday and we have all been out for the count ever since. Today is the first day I feel pretty normal. Poor baby A got sick Sunday and she ended up infecting the rest of us. I haven’t been that sick in literally decades. I don’t wish it upon anyone, especially parents. All I wanted (and needed) to do was lay in bed and sleep. That’s not possible as a parent. It hit me first and the worst and once Nick caught it, things were pretty touch and go for awhile. We had to take turns with Avri since neither of us could last hardly 5 minutes taking care of her (who was also sick). Good news is, we are all feeling much much better and those tough days are behind us.
These energy balls are little balls of Easter heaven. No need of peanut butter cups or chocolate bunnies when you have these in your fridge to snack on. I am having my family over for Easter this year and we are doing brunch so these will go perfectly with coffee or as a little treat after our meal. I am so excited to start holiday traditions with Avri. Growing up we got some epic Easter baskets and I can’t wait to do the same for A. I just got her “basket” today. I say “basket” because I actually ordered her this toy chest. We need something bigger to hold all of her toys anyways, so this will be perfect. And how cute is that lion? She absolutely adores lions. She has a lion toy and anything with a lion on it she loves.
Anyways, back to the point. These Almond Butter Chocolate Coconut Energy Balls! These little bites will keep you fueled and energized, feel like you are indulging in a sweet treat and are incredibly simple to make!
- 1 cup almond butter
- ½ cup rolled oats
- ¼ cup unsweetened coconut flakes
- ¼ cup + 2 tbsp enjoy life chocolate chips
- 1 tbsp raw honey
- 2 scoops Primal Kitchen Chocolate Coconut Collagen Fuel
- Add all ingredients (accept for 2 tbsp of chocolate chips) to a food processor with the dough blade and blend until fully combined.
- Line a cookie sheet with parchment paper. Using a cookie scoop form the almond butter mixture into 10 balls and place on the parchment paper.
- Melt the remaining 2 tbsp chocolate chips and drizzle over energy balls. Place in fridge for 30-60 minutes.
- Enjoy!
Any chocolate protein powder will work
