What a Monday it has been! Adulthood has been smacking me in the face hard the last week or so. But, I still have so much to be thankful for and a wonderful Easter with my family is one of them! We had such a relaxed and fun Easter with my family at our house and the 80 degree weather didn’t hurt either. Life sure knows how to knock you down sometimes, but no matter what there is always something to be thankful for.
Expressing gratitude has its benefits. The more I internalize and express gratitude the happier I am, I am more productive, I stress less, and my relationships are better with others. When I am overwhelmed or stressed is usually when practicing gratitude is the hardest for me. And man, life has been a ball of stress lately. I am ready to rid myself of this stress and anxiety and put my efforts towards being grateful. It is time for me to take a step back, reflect on all the amazing things I have in my life, and be grateful.
I wanted a little dip to go with our Easter brunch so I whipped this up on a whim and it was absolutely delicious. Everyone loved it too! I was eating it by the spoonful. This dip is perfect to prep and pair with some fresh cut fruit for a snack throughout the week. Enjoy!
- 1 8oz container plain dairy free cream cheese
- ½ cup plain coconut yogurt
- 2 tbsp honey
- juice and zest of ½ lemon
- Combine all ingredients in a medium bowl and blend until smooth using a handmixer.
- Enjoy with your favorite fresh fruit!
