
I gave baby A a slice of these waffles and she loved them! She loves blueberries so after she picked and ate all of them she then ate the waffle. These would be great for any family doing baby led weaning or just looking for a better waffle alternative for their littles. Let them help you make them and add their own toppings. They will be much more motivated to eat them. You could even sneak in come spinach or kale in these and they wouldn’t even notice.
I might have to make these again for dinner tonight because 1. they are that good and 2. remember we are making #wafflewednesday a thing! Get out that waffle iron, grab the few ingredients and get cracking! You won’t regret these.
Blueberry Sweet Potato Waffles

Ingredients
- 3 cups shredded sweet potato, about 1 large sweet potato
- 3 eggs
- 1 tsp cinnamon
- ⅓ cup fresh blueberries
Instructions
- Wash and scrub your sweet potato and scrub clean. Shred the sweet potato.
- Combine the shredded sweet potato, eggs and cinnamon in a large bowl and mix well. Fold in the blueberries. Follow the instructions on your waffle maker.
- Top with toppings of choice and enjoy!
