Happy Monday and happy birthday to me! Today I am reigning in the big 3-0. I have mixed feelings about this birthday. I am married, a mom, own a home, have a career and adult every single day. Then, I also feel like I am still 20 years old, living in college and waiting for “life” to happen. I remember thinking 30 was so old and sure, I am halfway to 60, (thanks for the reminder dad) but I have created such an amazing life so far and have so much life to live yet.
I am going to be really honest, the last few months my attitude and mindset have been awful. I have been struggling to find motivation, have passion towards anything, can’t find joy and have been living “the grass is always greener” mentality. I am to the point that I am so fed up with my own crap. I am the only one that can control and change how I have been feeling. So that’s what I am going to do. I am not going to dwell on all the things I haven’t done in my 30 years of life or the things I don’t have and instead focus on what I have done, the blessings in my life and all the things I get to look forward to.
I don’t want Avri seeing her mom unhappy, lack confidence and be negative. I want to be a role model for Avri and show her that women are strong, confident and deserve all the happiness in the world. Today, on my 30th birthday I am turning over a new leaf. It will be work every single day, but I am ready to put in the work. I am sick of feeling this way and it isn’t anyone else’s responsibility but my own to fix it. So buckle up, this is going to be a journey.
Next weekend is Memorial Day weekend which is the kick off to summer! I can’t wait for weekends at the cabin, pontooning and all the cookouts. This Broccoli Cauliflower Salad is the perfect side to any cookout. It is easy to make, requires no cooking (besides the bacon) and is a crowd pleaser! Get this recipe on your Memorial Day weekend menu!
- 2 heads broccoli, chopped in small pieces
- 1 head cauliflower, chopped in small pieces
- 1 green onion, chopped
- 5 pieces cooked bacon, chopped in small pieces
- ¾ cup fresh blueberries
- ¼ cup unsalted sesame seeds
- 1 cup paleo mayo
- 2 tbsp red wine vinegar
- 1 tbsp honey
- salt and pepper to taste
- Add the broccoli, cauliflower, green onion, bacon, blueberries and sesame seeds to a large bowl. Set aside.
- In a small bowl, combine the mayo, vinegar, honey and salt and pepper and mix well. Pour the dressing over the salad and mix well.
- Serve immediately or place in refrigerator covered to chill.
