Memorial Day weekend is just around the corner and it is officially the kick off to summer! if you will be BBQing and celebrating check out my post on How to Create the Perfect Memorial Day Cookout. I go over what to grill, what sides to offer, fun healthy cocktails and of course easy delicious desserts!
These drummies are perfect for Memorial Day weekend too and to have as part of a gathering with friends or family. If you want to serve these as part of a party, put them in a crockpot on “keep warm” once they are done. They will stay nice a hot for all of your guests throughout the day.
- 4 pounds chicken drumsticks
- ¾ cup coconut aminos
- ¼ cup honey
- ¼ cup packed cilantro, finely chopped
- salt and pepper to taste
- Place an oven rack in the top position and preheat oven to 400 degrees. Line a baking sheet with foil and place a wire rack on top. Grease the wire rack. Place the chicken drummies on the wire rack and sprinkle with salt and pepper. Bake for 50 minutes.
- While the chicken is baking, add the coconut aminos and honey to a small sauce pan over medium high heat. Bring to a simmer and let simmer until sauce thickens enough to stick to a spoon. Remove from heat.
- When the drummies are done cooking, place them in a bowl, add the cilantro and pour the sauce on top. Toss to fully coat.
- Enjoy!
