Another reason I love meals like this is because only the stove top is being used so the oven doesn’t heat up the entire house on a hot day. It’s a great way to get in a bunch of vegetables, protein and have enough leftovers for lunch or dinner the next day or two.
I used venison kielbasa sausage in this recipe, but any kielbasa or polish sausage will work. Feel free to change up the vegetables used as well. Just about any vegetable medley and sausage will be good. Enjoy!

Recipe type: Entree
Ingredients
- 1-2lbs kielbasa sausage
- 6 pieces bacon, chopped
- ½ yellow onion, chopped
- 5 baby red potatoes, thinly sliced
- 1 small head broccoli, cut into florets
- 2-3 medium carrots, peeled and thinly sliced
- 1 cup cherry tomatoes, halved
- 2 tbsp ghee or other cooking oil*
Instructions
- Place a large skillet on the stove over medium high heat and add the bacon pieces. When halfway cooked, add the chopped onion and mix well. Once the onions become translucent transfer the bacon and onion to a paper towel lined plate. Set aside.
- If the bacon didn't leave behind about 2 tbsp of grease, add ghee or other cooking oil of choice. Add the potatoes, broccoli and carrots and mix well. Cook for 10-15 minutes stirring frequently.
- Once the potatoes become tender, add the sausage. Cook for and additional 10-15 minutes or until the sausage is fully cooked. Stirring frequently. Add the tomatoes when you have 1-2 minutes of cooking left.
- Serve hot and enjoy!
Notes
*I used venison bacon which didn't yield any grease so I add 2 tbsp ghee before adding the vegetables to the pan.
