I have been making Avri different meat based breakfasts lately and she is loving it. I have been prepping these muffins, a hash or breakfast patties which has made getting her food ready in the morning that much easier. Nick feeds her breakfast on the days I work, so I am able to very quickly get her breakfast ready while packing my own food for the day when I have hers already prepped. And let’s get real, I use them for my meals too! Nothing like killing two birds with one stone.
A loves her food to have flavor which is why she loves pork sausage. I will sometimes switch out turkey sausage for the pork sausage or do a combo of both. With these muffins, it’s easy to sneak in some vegetables too! These muffins are great for kids, but would also be great for anyone. If you aren’t an egg person or have an egg white allergy, like Avri, these meat muffins are a great way to start your day with protein, veggies and healthy fats. Add a little fruit or extra veggies and you have yourself a great balanced breakfast.
Feel free to double the batch so they last you the week. Avri usually only eats 1/2 of one at time so one batch is plenty for us. Stay tuned for another great meat based breakfast recipe coming to the blog soon!
- 1lb pork sausage
- 1 cup kale, finely chopped
- ¼ cup dairy free cheese*
- 2 egg yolks or 1 whole egg**
- ¼ tsp salt
- ½ tsp garlic powder
- ⅛ tsp black pepper
- Preheat the oven to 375 degrees.
- In a large bowl, combine all of the ingredients. Using your hands, mix until fully combined. Wet your hands slightly so the meat doesn't stick to your hands.
- Add the meat mixture evenly into 6 muffin cups and place in the oven for 15 mins.
- Let cool and enjoy!
**Avri is allergic to egg whites. If you don't have an egg white allergy, you can just use 1 whole egg instead of 2 egg yolks.
