I am always looking to get more vegetables into Avri’s diet and these muffins certainly do the trick! Some days Avri will eat all the vegetables I serve her and the very next day she won’t touch them. Good thing is she is always down for one of these muffins. In fact, she always asks for at least two at a time.
Sneaking vegetables, especially leafy greens, into your’s or your child’s diet is very beneficial and has great healthy benefits. Spinach is high in iron, vitamin K, A and C and magnesium. So, eating plenty of greens help and support healthy iron levels in your blood, strengthens your bones, immune system and eyesight, supports a healthy heart, and will keep you feeling good and energized.
If you have a little one that doesn’t like to eat their veggies, try offering them these muffins. Better yet, let them help you make them. Avri gets to help make these muffins and her favorite part is licking the spoon. It is a fun activity to do with your little and they will be more likely to eat what they helped prepare.
- 1 ripe banana
- ¼ cup nut milk of choice
- ¼ cup peanut butter or almond butter
- 1 egg
- ½ cup unsweetened applesauce
- 2 cups fresh spinach, loosely packed
- ½ cup cassava flour
- ¼ tsp baking soda
- ¼ tsp cinnamon
- ½ tsp vanilla extract
- dash of salt
- Preheat the oven to 350 degrees and grease a mini muffin pan with cooking spray.
- Add the banana, milk, peanut butter, egg, applesauce, spinach and vanilla extract to a food processor or blender. Pulse until the spinach is chopped into very fine pieces. Stop to scrape down the sides as needed.
- Add the flour, baking soda, cinnamon and salt to the food processor. Blend until fully combined stopping to scrape down the sides as needed.
- Add about 2 tbsp of batter to each mini muffin cup. Place in oven and cook for 15 minutes.
- Let cool and enjoy! Store in an airtight container in the refrigerator.
