To me, oats are so comforting and I like them just about anyway. I haven’t tried savory oats yet, but they are on my list! I like to opt for overnight oats when I need breakfast prepped ahead of time. I will prep a batch or two in mason jars and leave them in the fridge until I need them. One of my other favorite ways to have overnight oats is to make them in an almost empty container of peanut butter. If you haven’t tried this yet, you have too!
With fall and apple season in full swing, these overnight oats are a must make. It is like having apple pie first thing in the morning. You can even heat them up if you want to enjoy them warm. You will feel extra festive this fall with these overnight oats on your breakfast meal plan!
You can easily double or even triple this recipe so you have breakfast on the go for a few days. Oats are generally an addition to my breakfast. Since these oats are loaded with yogurt and collagen powder, I simply pair them with a couple eggs to get in a bit more protein. If you have time in the morning you can scramble or fry a couple eggs. If you need more of an on the go option, hard boil some eggs when you make your oats and you will be fully prepped and ready for your breakfast the next day.
- ½ cups gluten free rolled oats
- ⅓ cup plain yogurt*
- ½ cup dairy free milk
- ½ medium apple, diced
- 1 tbsp chia seeds
- 1 tsp honey
- ½ tsp vanilla extract
- 1 scoop vanilla collagen powder**
- ½ tsp cinnamon
- dash of salt
- Add all ingredients to a bowl and mix well. Cover and let sit in refrigerator overnight.
- Enjoy!
**Any vanilla collagen or protein powder will work.
