Add the peanut butter, honey, coconut oil, flaxseed and 2 tbsp coconut flakes to a food processor. Pulse until all ingredients are combined stopping to scrap down the sides when needed.
Line a loaf pan with parchment paper and add the peanut butter mixture. Evenly spread it throughout the entire pan. Set aside.
Add the chocolate chips to a double boiler or microwave safe bowl and melt. Stirring continuously. Pour the chocolate on top of the peanut butter mixture and evenly spread.
Add the raspberries, blueberries and remaining 1 tbsp coconut flakes on top of the chocolate.
Place in freezer for 2+ hours.
