These cookies are bomb. Seriously, I want them for breakfast, lunch, dinner and then again for breakfast. No, they are not paleo because I use oat flour. If you remember a few weeks back I told you I will be venturing outside of the strict paleo world and sharing other recipes that are still healthy. If you missed that post, read it here!
We are going on a little mini vacation this weekend with friends and I am so excited! I think I am more excited about creating the menu for the weekend. I volunteered to be in charge of breakfast because I absolutely love breakfast. I am thinking of making French toast and a quiche full of meat and veggies. I am also going to throw a whole chicken in the crockpot the night before we leave and prep it into a big ole container so we (ok, really so I) have something to snack on while soaking up the rays. There will be homemade salsa, guacamole, sweet potato chips, fruit, veggies and I am of course making my Champagne Refresher because champagne in hand while making breakfast on vacation is an absolute must.
I don’t plan on tracking macros this weekend but I also don’t plan on eating like an a-hole either. Eating crappy food or eating until I can’t breathe just doesn’t make me feel good so I try to avoid it. I’ll try to remember to snap pictures of my eats over the weekend so I can share with you how I still stay on top of my goals while still having fun on vacation! I will also share as much of my activities (because I plan on getting a couple workouts in) and eats on snapchat so if you don’t follow me yet, you better! Snapchat: kissbybrooke

- 1 cup almond flour
- 1 cup oat flour
- ⅔ cup coconut sugar
- 1 tsp baking soda
- 2 tbsp coconut oil
- 2 eggs
- ½ tsp vanilla
- ½ cup enjoy life morsels
- Preheat oven to 350 degrees and line a cookie sheet with parchment paper.
- In a large bowl sift together the dry ingredients with a large spoon (except for the chocolate chips).
- Add in the wet ingredients and mix until smooth (batter should be thick).
- Fold in the chocolate chips.
- Place 15 small balls ½-1 inch a part on the cookie sheet.
- Bake for 10 minutes.
